common mistakes and how to fix them
Many people buy bagged green tea from the grocery store, brew it too long in too hot of
water, and decide they don't like tea at all. Brewing your tea incorrectly and using low
quality or faux tea can lead to disastrous results. Follow these tea tips:
1. Buy loose leaf tea, which is the higher quality tea and costs about the same as
bagged tea.
2. Bring fresh cold water to a boil but don't over boil. Just bring your water to a rolling
boil and turn it off. If you over boil, you will lose the oxygen in the water, and the oxygen
is what adds taste.
3. Use about a teaspoon of tea per 6 oz of water. Put your tea in either a strainer or
directly into your cup. A glass teapot or bamboo strainer elimiinate the metalic taste.
Do not use too much tea! If you pack your teaball, your tea will not have room to expand.
Your tea will double in size once it begins brewing.
4. Warm up your teapot or teacup with hot water before brewing, so the tea will not cool
down too quickly. Cover your tea while it brews with a tea cozy or lid.
5. Brew your tea for three to five minutes. Brew green tea no more than three minutes,
or it will taste bitter. Brew herbal teas longer until you reach your preferred taste.
6. Once your tea is brewed, remove the tea leaves! You can re-use quality tea leaves,
so save them for the next cup!

San Antonio Rose Iced Tea
1 c. Hibiscus Tea 2 qts. hot water 1/2 c. sugar 1 large can pink lemonade
Brew 1 c. hibiscus flowers in 2 quarts of water and add 1/3 c. sugar. Let cool. Mix in 1 large can pink lemonade and serve over ice. Yum. Caffeine free.
